Meet Lalit

Lead Shaker & Stirrer

Lalit’s fascination with bartending began during a co-op placement, where it quickly became clear that the bar was more than a place to make drinks—it was where creativity, energy, and genuine guest connection came together to shape the true hospitality experience. What started as a role soon evolved into a craft rooted in intention, awareness, and memorable moments.

His approach is precise and guest-driven, with a particular passion for gin and its expressive botanicals. Lalit favours balance over excess, leaning toward lighter acidity and restrained sweetness to allow flavours to speak for themselves. Every cocktail is crafted with purpose, guided by a philosophy that prioritizes both technique and the person across the bar.

Influenced by calm, guest-first mentors and energized by the rhythm of a busy service, Lalit is meticulous in his preparation and uncompromising when it comes to safety and consistency. Above all, he takes pride in creating an atmosphere where guests feel welcomed, remembered, and genuinely impressed—one well-balanced drink at a time.
